I have setup a gateway to my asterisk (FreePBX) server, and have set the inbound destination correctly, however when I go to the log viewer in FusionPBX, I see this:
My goal is to allow calls between these 2 PBXs utilizing the current SIP registration between the 2.

and you must configure your device to use the proper domain in its authentication credentials.
