Yes. apt install libreoffice-writer libreoffice-calc and the other formats will begin working. Does anyone know if the default setting allowed_extension has any effect? I did not add any of the word processing or spreadsheet extensions there, but they all preview OK in the Fax Portal.

I seem to have it working now by changing the tone_detect duration from +5000 to +6 and adding a few more settings. Calls are not being interrupted and incoming faxes are received. Going with this for now.
