    Replying to myself: I found the issue in the install script; resources/config.sh master has been set as the default. I'll change that and reinstall.

    This. We just discovered the same thing. I did look at this page: https://docs.fusionpbx.com/en/latest/advanced/upgrade.html bit is says it is not recommended to downgrade. I am happy to reinstall with the stable version.
