sometimes I like to watch the lines scroll by in the fs_cli.

What I would really love is to just see 1 line per action from an IP
like 1 line for a register with ip (currently does this)
or 1 line for a call start/stop with ip and extension/domain.

I find things trying to make calls out of my switch and its can be hard to find the ip sometimes :)

Is there a way I can do that?

I don't know how to do what you ask in fs_cli but there is a tool called sngrep that may do similar to what you require. Link below:

Be careful if you have a busy server I have known sngrep to "seg fault" if it captures too much data, but you can control this to an extent by setting capture filters on the command line.
By default, running sngrep in a terminal with no parameters will capture all SIP traffic, if you run sngrep -c it will show calls, one per line, as you require.
